Homemade Cupcakes

Posted on | August 30, 2010 | 10 Comments

This is another backdated post. Cupcake was one of the dessert on my Engagement Party Menu. Let me tell you – I didn’t end up putting the failed cupcakes on the table. I was definitely not satisfy with my work. It was just not good enough for presentation and I only ended up putting icing on 10 of the cupcakes. Why are icing so hard to use?? I even bought an icing gadget to help me!!!

The dessert decorator was what I bought as well. I guess it’s really for whip cream more than icing eh??

Cupcake Mix. I use the pre-package ones which is a lot easier to do. Do you make it from scratch??

I made about 30 cupcakes and half of done vanilla and half of them chocolate. I even use gold foil paper to match it as well. But too bad – I didn’t get to finish all of them!!

The finish product which is only 10! I was not satisfy with my first time cupcake making work.

I wish I done a better job than this. I tried one – the icing was just TOO sweet. I need tremendous practice with this. Any suggestions on the icing you guys use?? I just don’t want super sweet icing. Please help!!!!

These turned out so pretty! I love the roses on top. If you’re looking for a frosting that isn’t too sweet, I have a recipe for Swiss Buttercream that’s delicious and not too sweet at all. Here’s the link if you’re interested: http://www.anediblemosaic.com/?p=3178.

I like to use a cream cheese icing on my cupcakes (but you have to like cream cheese). The frosting is sweet, but more tangy, and not nearly as sweet as traditional buttercream. Your cupcakes look precious though!

You’re icing looks pretty. Usually I just smear it on. But for a basic recipe, cream 3 sticks of softened butter with 4 cups of confectioner’s sugar and 1 tablespoon of vanilla. You may add up to 2 tablespoons of milk to make the icing easier to spread.
